Background

I am a biochemist interested in addressing various microbial problems related to fermentation. My doctoral research at the University of Illinois at Urbana-Champaign involved characterizing enzymes derived from viruses and understanding how they can be implemented in the soft Hispanic-style cheese, Queso Fresco. I have previously taught courses at the University of Illinois at Urbana-Champaign as well as Monmouth College.
